Cocktail History: The Bellini

1 white peach (puréed)

4 ounces chilled Prosecco

The Bellini is a classic Italian cocktail created in the 20th century, and still a popular favorite even today. 

This drink was created 1943 at Harry's Bar in Venice, Italy by Giuseppi Cipriani. The original recipe was made with fresh pureed white peaches with a bit of raspberry or cherry juice to give the drink a pink glow. 

That pink glow was inspired by the palate of the Italian Renaissance artist, Giovanni Bellini. The drink started as a seasonal specialty served at Harry's Bar, which was a favorite spot of Ernest Hemingway, Sinclair Lewis, and Orson Welles. 

So the next time you're sipping on a delicious Bellini, think about it's history, the beautiful color of peaches, art, inspiration, and Ernest Hemingway.
