I have only just found the Tolkien Disability Pride tag! Well, my Adar fics usually discuss disability - his own, and the disability culture of uruk-hai, who believe that their near-infinite variations in body and ability are their divine contribution to Creation. They are interdependent and care for each other as one body. This is their rebellion against Sauron's 'perfection', and against the elves who despise ugliness and mortal 'decay'.
I think my current work-in-progress, 'On the Bright Western Shore', is the most detailed re disability.
It is rated Mature for Adar's memories of Utumno and Angband (PLEASE READ THE WARNINGS!!!), but the 'present' of this story is mostly Adar and Cirdan pottering around in the garden like Frog and Toad, drinking tea and talking to hedgehogs.
Adar (barely) survives his assassination at Eregion, and is given asylum by Cirdan in the Grey Havens. Cirdan has long been concerned about the fate of the moriondor and their persecuted children, so this is an opportunity for elves and uruks to move forward. Also, he has a massive crush on Adar personally...
This fic has some details about Adar's gauntlet as an accessibility device, the effects of millenia of torture, the sensory & communication differences among uruks, and confronting elvish assumptions about health, 'purity', independence, and ability.
