Homemade Spinach Wraps with Chopped Greek Salad…RECIPE
this could so easily to adapted to suit Low FODMAP people like me!Â
What I am finding work for me, is not being super strict, just managing my portions of high FODMAP stuff and generally keeping it snacks or treats.
Going off it entirely was BS and lead to me giving up and just going back to a diet that eventually made me really unwell, again.Â
Tuna pasta bake with salad
The bake was a bit… Beige. It needed something more, but with the salad it was tasty. Next time i might add rocket (arugula), spinach or tomato to the bake.

Egg-stuffed Capsicum (aka Dinner)
2 eggs (was a BIG capsicum, could have used 3) Baby spinach and rocket Salt and Pepper Splash of lactose free milk Grated cheese to topÂ
180 degree C oven cut 1 third of the cap and all it's innards away double-lined capsicum with greens beat eggs, seasoning and milk together before pouring into capsicum top with cheese bake for 30-40 minutes or until egg is firm served with a salad and sweet chilli sauce
next time... it was a bit bland, hence the chilli sauce, maybe add english spinach or silverbeat instead of baby spinach, and some herbs. also next time i'll be more careful with how i'm cutting the cap, as when i filled it up with egg mix it started leaking from some slits i'd made while removing the core. If i weren't vegetarian, i'd trying adding some bacon or something for flavour.
Rice cake toasties. Because I'm almost out of food but don't want to go shopping right now.Â
They needed basil and salt but otherwise were tasty.

Vermicelli Noodles Cucumber Carrot Capsicum Mint Garlic free sweet chilli sauce And zucchini, battered in GF flour, salt and cayenne pepper and pan fried in garlic-infused oil
All wrapped up in rice paper.
Delicious, easy, and all Low FODMAP!
Next time instead of cayenne pepper in the batter, i'm going to try ground ginger.Â
Spinach and egg filled capsicum
I used about a third of a capsicum (remove all the insides), then lined it with a handful of baby spinach and filled it with egg mixture (2 eggs, 2 tsp nutritional yeast, splash rice milk, salt and pepper), then top with a little grated cheese. Bake until cheese is golden and egg is firm. Enjoy!
hmm what to have for lunch…. i have capsicum maybe something with that?
But yeah ive never stuffed anything before so i just grabbed what i had in my pantry and throw it all together, and this is what i created!! Now i wont give you measurements because i have no idea just put in how ever much you like really!
1 green cap
Feta cheese
brown rice (1 think i used aprox 1-2 tablespoons)
grated zucchini
grated carrot
diced tomato
spicy chilli sauce (see my quinoa tuna salad post, its chilli, olive oil, lime juice)
Then bake in over for roughly 10 minutes! I loved this so tasty and lots of veggies my favorite! yum yum

Eggplant Melts
3tbsp Olive Oil 2 Eggplants, halved lengthways 4 Tomatos 150g Mozzarella Handful of basil leaves
Heat oven to 180C Drizzle oil over eggplant and bake in oven for 25 minutes or until soft Meanwhile, slice tomatoes and mozzarella, then arrange on top of eggplant Return to oven for 5 minutes or until cheese is melted Scatter basil leaves over the top and serve hot

And most of it, if not all of it, is low FODMAP friendly.
