Ingredients: 4 eggs. 2 cups diced potatoes. 1/2 cup diced tomatoes. 1/4 cup diced onions. 2 cloves garlic, minced. 1/4 cup tomato sauce. 1/2 tsp red pepper flakes. Salt and black pepper to taste. 2 tbsp olive oil. Fresh basil leaves for garnish.
Instructions: Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until they become crispy and golden brown, about 10 minutes. Remove and set aside. In the same skillet, add more olive oil if needed and saut onions and garlic until translucent. Add diced tomatoes, tomato sauce, red pepper flakes, salt, and black pepper. Cook for another 5 minutes. Create four small wells in the tomato mixture and crack one egg into each well. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes. Carefully place the crispy potatoes on top of the eggs. Garnish with fresh basil leaves and serve hot.
