Lettuce boat lunch
I got a bacon cheddar burger from the butcher counter and grilled it, topped with cheese and put bacon and a mayo-ketchup combo on top. Served over lettuce and with claussen pickles and a side of green beans in butter.
Cranberry pecan muffin Sooo good. Made from alldayidreamaboutfood recipe. Definitely will make again!! These are in my freezer and are an easy snack or breakfast to grab and go!
Spaghetti Squash casserole. I stab the squash all over and then microwave it for about 12-15 minutes. I also steamed some broccoli. Then I shredded the squash, poured it in a big bowl with the steamed broccoli and added shredded cooked chicken, Alfredo sauce, and shredded cheese. Mixed altogether and put in baking dish. Topped with cheese and a bit of Italian breadcrumbs (just a tad!- of course you could leave this off). Haven't been on keto so much lately so hoping to get back in the groove.

Cauliflower tuna melt Leftover cauliflower rice 1 can tuna, drained 1-2 Tbsp cream cheese 2 slices cheddar cheese torn up Mix this all together and microwave for 2-3 minutes. Top with additional cheese and put under the broiler for a few minutes to brown.
It's been a while since I had a good big ole salad. This was aaaaamazing. Romaine lettuce, baby cucumbers, chopped radish, chopped up leftover pepper nachos, leftover fajita chicken for protein, cauli rice, Parmesan cheese, and ranch dressing.

Chocolate protein shake for lunch today
Make this!! Roasted cabbage topped with lotssssss of bacon and cheese. Peel a cabbage until the dirty layers are gone and rinse it well. Pat it dry. Preheat the oven to 400. Cut it into thick chunks - if the chunks aren't thick enough the cabbage comes apart. Place the slices on a baking sheet and brush with oil- I used Italian olive oil and salt and pepper (both sides). Put in the oven for a hour, flipping it over after 30 minutes. At about 20 minutes left, I cut up a package of bacon and crisped that up in a skillet. When the cabbage is done, top with bacon and cheese and put back in the oven for 5 minutes. This was a win.

What a surprise- taco salad. This blog has prob half taco salad pics and that's just the ones I post. Oy. It's so good I can't help myself. I steamed veggies and topped those with taco meat and cheese and the regular taco stuffs.

Leftover spaghetti squash casserole. Used up cream cheese chicken and roasted veggies added more cheese and baked at 350F until bubbly.
Some photos of the bone broth I am so happy about. Poured some into a mold to freeze. Separated out the fat (a very good amount) to get tallow from. Made from all bone marrow bones. This is what I did-- roasted the bones at 400 for maybe 30-40 minutes. Put all the bones (there were about 7 or 8) in my crockpot. I poured about 2 tablespoons apple cider vinegar in and filled it with filtered water. Then I turned it on low.. That was Saturday midday. I kept it on low until Monday morning when I strained it. I didn't need to add water but I stirred it around a few times. I got two containers worth of broth. And quite hearty chunks of fat. 💃🏽
