My computer died and it's hard to type out the recipes on a phone. Look forward to peirogi lasagna though!
Cheddar soup
2 leeks 2 potatoes 4 carrots 1 stick butter 6 cups vegetable broth (I used my homemade one!) 1 garlic clove, minced 1/2 teaspoon dried thyme salt and pepper to taste 1 cup milk 8 oz. shredded Cheddar cheese Clean, peel, and chop the vegetables. Melt the butter in a soup pot and saute the vegetables lightly stirring frequently. Add the broth, garlic, herbs, and seasonings. Bring to the boil, cover and simmer for 30 minutes. Blend the soup in a blender and return to the pot. Add the milk and cheese. Reheat, but do not boil.
Lazy French Onion Soup
This recipe is super simple and comes out delicious! Please note, your house will smell like onions while it is cooking and it takes a LONG time, but so worth it!

Homemade Veggi Broth
This is not really a recipe, more like aĀ āStop food wasteā type thing! A lot of recipes you end up with left over vegetable bits: potato peelings, tomato ends, slowly wilting fresh herbs because you didnāt need the whole thing. This is what I do with my scraps!
How do you go about this? Well every time you have a scrap, add it to a gallon freezer bag and return to the freezer. Keep adding vegetables until full! Then in a large soup pot, add the gallon of frozen vegetable scraps and at least 8 cups of water. Boil the hell out of it! How long to boil is really up to you. I usually boil it for an hour and then simmer for the rest of the day. You may have to add a little bit more water. Once done, strain all the vegetables out and save in mason jars! ze Save for up to 2 weeks in the fridge or frezee it
Whats in mine to give you an idea? In this one I have:
Ā Butternut squash ends
Zucchini ends
Potato peices and peels
Cilantro
Tomato butts
Asparagus stalks
garlic
Onions both red and white
Bell peppers: both green and red
Carrot Peels
Salt

This recipe is amazing! I ate it before I could take a picture! This will last for up to 4 days as long as you keep the dressing separate. Feel free to add more things like Black eyed peas or Avocado! When cutting ingredients, try to get them as small as the black beans, much like a salsa.
Salad/Dip
1 can sweet cornĀ
1 can (15 ounces) BUSHāSĀ® Black Beans, drained
1 3/4 cup small cherry tomatoes, halved or quartered
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, diced (soak in cold water to remove the "bite" if desired)
1 small jalapeno pepper* finely diced, seeds removed
1/3 cup finely chopped cilantro (loosely measured)
Dressing
2 tablespoons red wine vinegar
1/2 lime, squeezed
1 teaspoon sugar
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/3 cup extra virgin olive oil
salt and pepper Tortilla chips, for serving
Instructions
In a large bowl, add the corn,Ā and drained BUSHāSĀ® Black Beans.
Prep the veggies: (as you prep these veggies remember the caviar is best when all of the ingredients are roughly the same size so aim to dice the veggies around the size of the beans) halve or quarter the cherry tomatoes, dice the red pepper, dice the green pepper, finely dice the jalapeno, and finely dice the cilantro. Add right on top of the bean and corn mixture.
In a separate container (like a mason jar, or dressing holder) add in the red wine vinegar, freshly squeezed lime juice, sugar, chili powder, cumin, garlic powder, salt & pepper (to taste, I just gave a good shake), and olive oil. Shake/stir till combined. Note: This does settle so may have to shake/stir every time before use.
If not serving immediately, make sure to store the dressing separately from the caviar. If you plan to have leftovers, only add dressing to what you will be eating presently and then store the two separately.

Dinner in a Pumpkin
Pumpkin (about 4-5 lb.) 1 lb. ground beef 1 small onion, chopped 1 can tomatoes (not jumbo sized) 1 cup instant rice, uncooked 2 cups beef broth 4 T. butter, melted 1 tsp. salt 1 tsp. thyme 1/2 tsp. pepper 1 c. grated cheddar cheese Cut a lid in your pumpkin, scoop it out and brush the inside with the melted butter. Set it in a shallow casserole dish. Brown beef and onion together, drain. Add the rest of the ingredients except the cheese. Combine and scoop into the pumpkin. Put on lid. Bake pumpkin in a 350 degree oven for about 2 hours, or until pumpkin flesh is soft. About 15 minutes before it is done, take off the lid and top it with the cheese, return to oven to melt. Serve by scooping the filling out with the pumpkin, delicious. You can save the seeds from your pumpkin to blanch and toast in the oven also. I added carrots to give it a bit more crunch and came out delicious!
Taco Salad
This is great if your going to a cookout and need to bring something!
Ingredients:
3 small tomatoes, cut small
1 head of Iceberg lettuce, ribbon cut
2 lbs hamburg
2 taco seasoning packets
1 bag of Doritos (any flavor, normal size or bigger)
1 bottle of Italian Dressing
Shredded taco cheese (optional)
In a large frying pan, crumble hamburg and mix seasoning in. Cook through, making sure to keep mixing so that the hamburg becomes crumbly. Drain and set aside.
In a large salad bowl, combine lettuce, tomato, and cheese (optional). Crush Doritos slightly and add to the bowl. Add the hamburg and the entire bottle of Italian Dressing. Mix well.
This can be enjoyed right away or placed in the fridge over night to let the flavors combine!
Zucchini Chips
These are a delicious snack alternative to chips or even pizza bites (though I LOVE pizza bites!)
Ingredients:
2 large zucchini
Shredded Parmesan
Salt and pepper to taste
Preheat oven to 350.
Cut zucchini into slightly thin discs, but not too thin! Place on a large non-stick cookie sheet. Lightly salt and pepper the tops. Add a small mound of cheese to each disc. Place in oven for 20 minutes!
Serve with a side of red sauce!

Terryās Yummy Stuff
The following is a recipe from my mother-in-law. Itās a very simple side dish but its oh so delicious!
Ingredients:
1 Summer squash
1 Zucchini
1 stick of butter
Salt and Pepper to taste
Cut squash and zucchini into thin round discs. In a microwavable safe dish (I use a casserole dish), make a layer of squash, then zucchini. Cut a few slices out of the butter and space it out. Shake some salt and pepper over it. Repeat until out of vegetables.
Place in microwave, covered, for six (6) minutes. Stir, and continue microwaving for another six (6) minutes.

Asian Chicken Casserole
Ingredients:
2 TBS Olive oil
1 pound boneless skinless chicken, cut into chunks
1 medium diced onion
1-2 handfulls carrot sticks
1 medium diced Green pepper
1 can mushroom soup, undiluted
1 cup Chicken Broth
1 small bag of chinese noodles
1 cup uncooked instant white riceĀ
2.5 oz Sesame oil
Preheat oven to 350.
In a frying pan, heat one (1) tbs of oil then fry chicken until slightly browned. Remove chicken from pan and set aside. Add the other tbs of oil and combine carrot sticks, green pepper, and onion. Saute until carrots only have a slight crunch.Remove from heat.
Ā Re-add the chicken to the veggies and add the sesame oil, making sure to mix together thoroughly.
In a separate bowl, combine mushroom soup with the chicken broth.
In a small casserole dish with a lid, layer the ingredients as follows: Chinese noodles, chicken/vegge mix, rice, and mushroom/broth mix. Continue layers until all ingredients are used.
Cover and bake in oven for 30 minutes.
Applesauce Bread
Honestly I am not a fan of this one but I am sharing it anyway because it did come out great and others did enjoy it, so maybe you will too!
1 c applesauce 1 c brown sugar 1 c white sugar 4 eggs, well beaten 4 c applesauceĀ 2/3 c milkĀ 4 c flourĀ 2 tsp baking soda 2 tsp salt 1/2 Tbsp cinnamon sugar Cream applesauce and sugar. Mix in the rest of the ingredients & stir until it reaches cake batter consistency. Bake in two large loaf pans heavily greased for 1 hr at 350 degrees.
Let sit for 10 minutes before letting cool on a rack.
