I’m starting to get the hang of work, just not so much of the sleeping pattern. 2 months +.

Sweet Pastry. I like to use the food blender to make my pastry. Blitz together 250g plain flour, 125g icing sugar and 125g cold butter until it forms fine breadcrumb texture. Change the speed to the slowest speed and add 1 beaten egg slowly. It should then come together into a ball. Knead by hand to make a smooth dough. Refrigerate for 2-3 hours. Roll the dough until it is approximately 3-5mm thick and line the pastry tin. Prick the base of the pastry with a fork to prevent ballooning. Make sure to put some sort of weight on the pastry to blind bake. Place in a pre-heated oven at 180 degrees for 12-15 minutes, when it starts to become golden, remove the weights and bake for further 4-6 minutes. I decided to egg wash my pastry to make sure it is waterproof, also to give it a nice golden glossy finish. Brush the pastry with 1 part egg yolk and 1 part milk before the second bake. Fill your tart with your desired filling. I used my previous Green Tea Diplomat recipe to fill the pastry case, topped with fresh strawberries.
