When I was younger I'd sometimes try to bake cookies using online recipes and they always turned out fine but not great and I never knew why. I can not overstate the devastation I felt when I realized that the brown sugar that is sold in usamerican stores, the type all those online recipes ask for, and the brown sugar that is sold in german stores are not the same and the only way to acquire american brown sugar is by ordering it online (expensive) or by mixing white sugar with molasses (also nowhere to be found in any store I've been to). If you're european and the only type of brown sugar you know is the type that is coarse and dry instead of moist and you've also been struggling with getting online recipes that require brown sugar right.
