cooked up some beef bacon tonight and it's the blandest cured meat I've ever had. Inoffensive, pleasant enough texture, but it only tasted like seasoning (and it's underseasoned). It's better than turkey bacon (texture is nice) but nowhere near as good as pork. I'll do some eggs tomorrow in the rendered tallow and see how that goes.
