Hiya!! I'm a phlebotomist who has never ever been normal about my job but yeah the reason why the blood comes out so fast is because there's a vacuum/no air inside the tubes used for blood draws, so when you're filling them there's a suction that makes your blood fill that empty space in the tube ^-^ and they design the tubes vacuum to pretty precisely stop at the maximum amount the tube is meant to hold (although underfilling it is ok for most tests)
