If they’re not making it a big deal, you shouldn’t either.

If they’re really nervous or emotional, respond with compassion.

If they’re excited, be excited with them.

I’ve seen a lot of things that seem to imply that it’s always best to be really super amped about someone coming out, but that kind of energy can be embarrassing or uncomfortable if the person doesn’t feel the same way.

On the flip side, if you respond with indifference, you might think you’re being s good friend by not caring whether they’re gay or straight or whatevs, but that can be extremely invalidating if this is a monumental or exciting moment for the person.

Toss small shrimp (I buy them frozen or canned for longer shelf life - for this recipe I typically use one can of shrimp) in a tbsp of mayo and a tsp of sriracha.

Air fry for ten minutes or until “dry” and lightly browning. You may want to stir or fluff halfway through, and you may want to line your fryer with foil to prevent mess. Add seasoning to taste - salt, pepper, onion powder, garlic powder. Toss again.

Add 2tbsp avocado salsa and a tsp of “everything” seasoning to four cups of romaine lettuce. Toss. (Use more or less lettuce for more or less concentrated flavor)

Add the shrimp to the lettuce and toss a final time.

Tip: I use a tsp of sriracha and medium avocado salsa, but if you’re sensitive to spice you may prefer just a dash of sriracha and a mild salsa (or plain avocado).

Tip: I air fry but I’m sure using an oven would be virtually the same.

Diced mango and salmon over greens (and I love to add diced Brie)

Diced kiwi over spinach, drizzled with honey (optional: and sriracha)

Watermelon and feta cheese over spring mix

Taco meat and cheese over shredded lettuce (add basically any taco toppings you like: tomato, onion, sour cream, etc.)

Mixing in pico de gallo to greens along with virtually any leftover fruits and veggies is great too! I like mango, corn, cucumber, or avocado to accompany pico de gallo.
