this is a mando kerky i make often (usually elk, I didn’t pull tags this year)

thin cut game or beef,

brags or shoyu,

curry powder, lots of cracked black pepper, red pepper flakes, tan tan moroccan spice mix, smoked paprika, cayenne—

little sweetener—I use maple syrup or coconut sugar

dehydrate for 6-8 hours depending on thickness of meat

(below, elk)

then sometimes a pemmican wih the drier bits hehe….

dis one has elderberries hehe

blend (or grind in molcajete) to fine powder heat beef tallow in pan just until it melts

(yew dont want it to be too juicy but still enough to hold everything together)

add meat + dried berries or fruit—let harden in some parchment, keeps for ages..
