rice noodles | spring onions | bean sprouts | coriander | mint | unsalted peanuts | dried chilli flakes I couldn’t be bothered thinking about/making a sauce so I used about 2tbsp of leftover veggie stock. It gave it that soup feel without the actual soup ☺️
iceberg | red onion | mixed sprouts | mixed baby tomatoes | snow pea sprouts | white vinegar/cracked pepper as a dressing (although I’d suggest something with a bit of fat like tahini or avocado for this salad (I was out of both))
Salad (iceberg|onion|tomato|snow pea sprouts | spring onion | dill | alfalfa) | baked sweet potato | sprouts | quinoa | more dill | hemp seeds I’ve found that the more vegetables I eat, the less sauce/dressing I care for. To me the tomatoes, dill and sweet potato give enough flavour that I don’t feel the need for anything, except pepper. That’s something I should clarify, literally every meal I eat that isn’t sweet is drowned in cracked pepper after I take the photo 😊
brown rice | slivered raw almonds | organic (but store bought) tomato pasta sauce | baked pumpkin | alfalfa I eat different versions of this meal for dinner a lot, I usually add greens but it’s the almonds that make it!

I look at all these wonderful people bringing out ebooks (that I love) and I always have a little chuckle to myself about how mine would be.
Step 1 - chop your vegetables
Step 2 - mix in your desired bowl
Step 3 - dress with lemon juice/tahini
Step 4 - eat your food
I can just imagine how inspiring it would be : )

As you see, I made banana bread for my mother the other day. It's vegan, but yet I'm still unsure on whether or not to eat it.
Last year I made it a few times and enjoyed it. I never really paid that much attention to it, but the more I read into it or think about nutrition and natural products, I wonder whether I'm meant to be eating banana bread. I question flours a lot, what's natural, what's safe and what's good for you. But that's probably the least of my concerns. It's the baking powder and the baking soda that I'm concerned with. Is it natural? No. I know it can be found (already made naturally) but that's not the product I'm buying. It's very early in my 'investigation' into all of this, so really, I don't know anything but its something I'm looking into.
I'd love to know if any of you have any knowledge on this subject or any kind of opinion, because you can read as much as you want, but sometimes personal experience is always the best.
My mum asked me to make some banana bread for her out of the bananas she always buys but never eats. She’s not vegan (not even close) and she can never tell the difference with the banana breads I give her. To me, banana breads taste the same with or without eggs and milk. So even if you’re not vegan, you’re not going to be disappointed : ) I used @thesimpleveganista recipe which can be found on her blog, but used wholemeal flour and coconut sugar instead, as well as adding blueberries and 2tbsp chia.

Since I began eating a plant based diet I’ve used mashed avocado as a dressing to coleslaws. I tried a tahini/lemon dressing instead and it works just as well. It’s always nice to have options ☺️
I was asked a question on instagam the other day that really, I didn't like at all. A young (14 I think) girl wanted to know how much I eat and what the measurements of the bowl I eat from was. My mind went straight towards weight control. I don't have photos of myself on instagram, so for all anyone knows I could be a morbidly obese 50 year old (I'm not, I promise). No one should be comparing their intakes to what they see on instagram. It's instagram! We should never, ever believe anything we see on social media, because no matter how honest you are, it's never going to be a 100% accurate representation of your life. I post the meals I eat, but I eat way more than you see. I have a smoothie everyday for breakfast, and for the 210 smoothie breakfasts I've had this year, you've only seen four or five of them. I post a lot of my lunches, which are only ever salads. It's an addiction that I'm completely happy with. But my dinners rarely make the cut. I eat grains at night - brown rice, rice/mung bean noodles and plenty of cooked vegetables. By the time 5'oclock comes around, i simply can't be botherd taking a photo of my food, so you rarely see that on instagram. My snacks are much the same. If I eat an apple, I don't see the point in showing anyone that, because we all know apples exist. No ones going to be inspired by me cutting up a green apple and putting it in a bowl.
I think my point is, that i don't use Instagram as a food log. I use it to maybe give someone else an idea on what to make for breakfast, lunch or dinner. When I see someone make a meal that looks amazing, I say to myself 'yep, I'm going to try that out' not 'yep, I'm going to eat like that so that I can somehow morph into them'. I know a lot about eating disorders, and the last thing I want to do is encourage them.
Eat what you want, not what somebody else wants.
I think it should be noted that the meals I post on Instagram are generally my lunches, sometimes breakfasts and rarely my dinners. I don’t really log what I eat in a full day because that’s not really how I use my Instagram. Although the kind of meals I eat are the same (my dinners usually have more grains and cooked vegetables) I do eat more than what I post on here (obviously). I also don’t really bother posting the kind of snacks I eat throughout the day. I’ve been thinking that I might share more of those aspects with you guys to give you a better idea of what exactly fuels my body. First up are these @freshnessfinefoods bars. All three are vegan and I usually take them with me when I’m working late nights and need that little bit extra. I always change my mind, but the raw chocolate and cashew bar is my favourite
