Think green papaya (som tum), or green mango salad, with a mix of Vietnamese herbs ๐ฟ This beautiful little lunch is made out of zucchini instead! Apart from the textural crunch given from green papaya or mango - it's spot on! I walked ๐ถ๐ปโโ๏ธoutside and picked jalapeรฑo, zucchini, purple and green beans, cherry tomatoes, Vietnamese mint, mint and purple shiso from the garden ๐ฉ๐ปโ๐พ In a mortar & pestle pound 2 jalapeรฑo and 1 long red chilli ๐ถ (or to your liking- I like it hot!), clove garlic and a little palm sugar. Scrape it out into a mixing bowl. Add a good few splashes of fish sauce and the juice of 1 lime to the bowl. Shred zucchini ๐ฅand carrot ๐ฅinto the bowl. Chop a handful of green/purple beans into mortar & pestle, add a few cherry tomatoes ๐ and pound a little, now add those to the bowl too. Tear some Vietnamese mint, mint ๐ฑand shiso into that bowl of goodness and give it a good stir. Fast food summer style with zucchini and tomatoes from the veggie patch... 15 minute zucchini 'spaghetti' with little tomatoes, capers and anchovy. Cook an onion in a generous amount of olive oil over a low heat, add 3 sliced garlic cloves and cook for a few minutes. Boil a kettle of water. Halve about 2-3 cups of cherry tomatoes. Add to the pan, cook over a low heat, add 3 or so anchovy fillets and a sprinkle of capers, season with s+p. Cook for 5 minutes. Meanwhile shred zucchini into bowl, cover with boiling water for a minute and drain.
