This vibrant and refreshing summer pasta recipe is bursting with flavors of ripe cherry tomatoes and fresh basil. It's a quick and easy dish perfect for busy weeknights or casual gatherings.
Ingredients: 8 oz pasta of your choice. 2 cups cherry tomatoes, halved. 1 cup fresh basil leaves, chopped. 3 cloves garlic, minced. 1/4 cup extra virgin olive oil. Salt and pepper to taste. 1/2 cup grated Parmesan cheese. Optional: red pepper flakes for heat.
Instructions: Cook pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut for 1-2 minutes until fragrant. Add cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften and release their juices. Stir in cooked pasta and chopped basil. Season with salt, pepper, and red pepper flakes if desired. Toss everything together until well combined and heated through. Remove from heat and sprinkle grated Parmesan cheese over the pasta. Toss once more to coat evenly. Serve immediately, garnished with additional basil leaves and Parmesan cheese if desired.
