Mezcal Monday //🌵🌵 ___________________________________________________ Rey Campero's 'Espadín + Pulquero' - this mezcal was produced with Espadín and Pulquero, or Agave Salmiana, also known as "The Green Giant" and which takes between 15-25 years to mature. Master Mezcalero Romulo Sanchez Parada built a clay pot still to use for this expression, making this truly unique and very special. Less than 100 bottles were allocated to California. Aclamaciones!

In addition to growing their own sweet potatoes for distilled spirits like gin and sweet potato liqueur, Corbin also grows rye as a rotation/cover crop, and so naturally they began distilling their own rye whiskey as well. I mean, yea of course it is, but Seven Stills is taking that to the next level. This SF distillery takes interesting, craft beers and make them...um, interesting-er! The end game for these guys is to have seven core whiskeys, each for a different hill in San Francisco, and each bottle designed by a local artist. (yea, their bottles are super cool too!) We’ll be pouring For the Czar, distilled from a Russian Imperial Stout; Sea Farmer, a collaboration with Berkeley’s Fieldwork brewing using their sea salt IPA; and Fluxuate, distilled using a small amount of cold brew coffee.
