ok so i dont know how to explain this in detail, but basically removing the ring forcefully will at least partially destabilise a throne for a second because it takes energy for them to hold themselves upright without it and because they dont expect it they cant refocus that energy into doing that in time.

the reason they continue to use the ring as a projectile weapon is simply because its them doing it, meaning they can expect it and immediately stabilise themselves afterwards. well, that and i thought the idea of using it as a weapon was cool as fuck. this is also why the rings are their weakpoints and not their heads which i think is pretty cool considering this means their strongest weapon is also their biggest weakness :D
