in the "something is about to start" sense : commencer, démarrer, débuter...

in the "suddenly getting angry" : "craquer" does work, it litteraly means "to break/snap" with the same figurative meaning about emotions as in english. i feel like it's most commonly used in the past (like an apology, like "désolé, j'ai craqué") or future tense (as a warning, like "iel va craquer si tu continue"). few things which feels important to mention:

"craquer" doesn't only have a negative connotation, it can also mean love! exemples :

- "j'ai craqué pour ce t-shirt et je l'ai acheté" ("i fell for this t-shirt and i bought it").

- "j'ai craqué pour elle" ("i have a crush on her").

- even "je vais craquer" (i'm about to snap) itself can juste mean you're about to positively loose it for something/someone.

the noun "craquage" exists and carries the same connotations, it can be a moment of anger, an impulsive purchase... anything you did while snapping, suddenly.

but to go back to "kicking off", some synonyms i can suggest:

- piquer une crise (to have a crisis)

- péter un câble/plomb (to blow a cable/fuse)
