Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/4 cup fresh orange juice. 2 eggs. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup fresh raspberries. Zest of 1 orange. 1/4 cup milk. 1/4 cup Prosecco sparkling wine for the frosting. 1 cup confectioners' sugar for the frosting. 1/2 cup unsalted butter for the frosting, softened. 1/2 teaspoon vanilla extract for the frosting. Orange slices and fresh raspberries for garnish optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. The softened butter and granulated sugar should be mixed together in a bowl. Mix them until they are fluffy and light. One egg at a time, making sure to mix well after each addition. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Add the dry ingredients slowly to the wet ones, mixing in the milk and fresh orange juice every so often. Mix the dry ingredients in at the beginning and end, until they are just combined. The fresh raspberries and orange zest should be added slowly. Fill each lined muffin cup about two thirds of the way to the top with cupcake batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. The Prosecco Buttercream Frosting should be made while the cupcakes are baking. To make the frosting, put softened butter, confectioners' sugar, Prosecco, and vanilla extract in a mixing bowl. Beat the ingredients together until the frosting is smooth and creamy. Spread or pipe the Prosecco Buttercream Frosting on each cupcake after they have cooled completely. If you want, you can decorate with orange slices and fresh raspberries. Your Orange and Raspberry Cupcakes with Prosecco Buttercream Frosting are ready to be served.
