Instructions: To improve the flavor penetration, remove the membrane from the back of the ribs. To make the rub, combine the brown sugar, paprika, cayenne pepper, black pepper, salt, chili powder, garlic powder, and onion powder in a bowl. Apply a generous layer of the rub to the ribs on both sides, making sure it gets into the meat. Set your smoker's temperature to 225F 107C and add some flavored wood chips that have been soaked. After positioning the ribs meat side up on the smoker grates, smoke them for three hours. Before sealing the aluminum foil, drizzle the ribs with a little apple juice or water. After two more hours, or until the ribs are tender, keep smoking. After giving the ribs a gentle shake, cover them with your preferred barbecue sauce and let them smoke for a further half an hour to solidify the sauce. Before slicing and serving, take the ribs out of the smoker and give them ten minutes to rest.
