Recently I’ve been reinventing french toast

I don’t have a sweet tooth but I always have bread and eggs and milk. I decided to try making french toast but without the vanilla, cinnamon, or sugar/syrup. I started with just a mixture of 1/4 cup milk per egg. My findings so far:

1. Frying with butter after soaking both sides works well on enameled pan

2. Turns out the butter was the reason it didn’t stick and is in fact necessary

3. Soaking the bread too much makes sloppy dissolving egg sponge

It needs something more

4. Smearing butter on it after frying isn’t doing it

5. Adding salt to the mixture also isn’t doing it

I realized it needed a sauce. Perhaps soy sauce! That’s savory!

6. Soy sauce was Not It

I think the sauce that that one place puts on their dan bing is what I need

7. It’s really hard to find the sauce when I can’t understand Chinese

8. Hoisin sauce isn’t what I want but it’s better than plain soy sauce

9. The potsticker sauce is kind of terrible with this and should be reserved for potstickers
