A comforting and hearty chicken noodle soup cooked slowly in a crock-pot, perfect for chilly days or when you need a warm and nourishing meal.
Ingredients: 1 lb boneless, skinless chicken breasts. 8 cups chicken broth. 4 carrots, sliced. 4 celery stalks, sliced. 1 onion, diced. 3 cloves garlic, minced. 2 tsp dried thyme. 2 tsp dried rosemary. 2 bay leaves. Salt and pepper to taste. 8 oz egg noodles.
Instructions: In a slow cooker, combine chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaves, salt, and pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender. Remove chicken from slow cooker and shred using two forks. Return shredded chicken to the slow cooker. Add egg noodles to the slow cooker, cover, and cook on high for an additional 15-20 minutes, or until noodles are tender. Taste and adjust seasoning if necessary. Serve hot and enjoy!
