I think people are forgetting that Crowley and Aziraphale’s story is about freedom and self determination. They chose to go out with their original universe because it’s what they wanted. They got to make a decision based on their free will to give the rest of the world the freedom they wanted.

Hey, remember bbc Sherlock? Remember how the seasons consisted of only four and a half hours of new content? Remember how people had to wait two years for a new season? Remember how the fandom went absolutely bonkers during every hiatus and made up so many headcanons and theories that they forgot the actual canon of the show? Remember how they basically made up a version of the show in their heads and then acted surprised when they actually watched the show and things weren’t going the way they wanted to?
