You can eat these fluffy and tasty gluten-free English muffins for breakfast or as a snack. They're simple to make and great for people who can't have gluten.
Ingredients: 2 cups gluten-free all-purpose flour. 2 teaspoons gluten-free baking powder. 1/2 teaspoon salt. 1 tablespoon honey or maple syrup. 2 large eggs. 1 cup milk dairy or non-dairy. 2 tablespoons melted butter or oil for dairy-free option.
Instructions: In a large bowl, whisk together the gluten-free flour, baking powder, and salt. In a separate bowl, whisk together the honey/maple syrup, eggs, and milk. Pour the wet ingredients into the dry ingredients and mix until well combined. Preheat a skillet or griddle over medium heat and lightly grease with butter or oil. Using a 1/4 cup measuring cup, scoop the batter onto the skillet to form muffins. Use the back of the measuring cup to flatten and shape the muffins into rounds. Cook the muffins for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and let cool slightly before serving.
