just wanted to share this recipe I found online! it’s from spendwithpennies and great for people who don’t generally like salads but want to learn to (like me). 729 calories for the whole thing but split into six it only comes to about 121 calories per serving! ✨
1/2 large red bell pepper diced (25)
1/2 cup cilantro finely chopped (2)
1 small avocado diced (160)
3 medium tomatoes diced (66)
1 can chickpeas drained (196)
1/2 lemon or a handful of calamansi (14)
1/4 cup dressing. the recipe recommends olive oil and red wine vinegar, but I used this olive oil/balsamic vinegar mix we had on hand (240)
total: 729cal or 121cal/serving
- simply chop up your vegetables and toss them together. I don’t finely chop all of mine because of personal skillz and also I feel like larger pieces give the salad more volume.
- for the avocado, squeeze the lemon juice/calamansi juice onto it. then toss in with the rest of the salad.
- add dressing, season with salt and pepper, mix, and serve!
it’s a bit of a fat bomb, but very healthy and you’ll even get some protein in.
you can substitute a lot of the vegetables according to your preferences. so zucchini for cucumber, tomatoes for cherry/grape tomatoes, cilantro for parsley, etc.
I haven’t tried it yet, but if you don’t have dressing available or are worried about the calories, I **think** a little bit of olive oil, a lot of lemon, and pepper might be a good substitute. not sure though.
