Peanut Tofu Noodles!
-Fettuccine noodles -Tofu -Broccoli -Cabbage -Asparagus (optional) -Onion -Garlic -Ginger -Soy sauce -2 tbsp Crunchy peanut butter -1tsp Sweetener (sugar, agave, etc.) -Coconut milk (can sub almond, cashew, soy, etc. milks) -Oil
Cook your pasta like normal. Fry tofu in a bit of oil on a medium high heat, then add your veggies. If you’re missing any one of the veggies, that’s okay, it will still be good! You could also add other veg like bell pepper, mushrooms, or whatever. Add as much soy sauce as you like, but not too much or it will be too salty. Then add the peanut butter, sweetener, and milk, using just enough of your chosen milk to mix with the peanut butter and soy sauce to make it saucy but not runny. Mix it up, then remove from heat, eat and enjoy!
Spicy cauliflower bites or “wings” as some people call them. This took me 10 mins to prep and I never follow a recipe but here’s what I did: Mix some flour (I used organic whole wheat) with almond milk or water, add spices like garlic and onion powder and whatever else you want, and then coat chunks of cauliflower in it. Then place on a tray, bake for 30-40 mins at 400F. Take them out and toss in a hot sauce of your choice then put them back in the oven for 5 mins. It’s that simple 😊 the dip is homemade ranch (just mix vegan mayo with lemon juice or vinegar, garlic powder and dill). 🌿

Anytime anyone makes an argument like this to you, about any vitamin, ask them precisely where that vitamin comes from. Animals aren’t magical reservoirs of ready made vitamins, those vitamins come from somewhere; most of the time the original source is plants, With only a couple of notable exceptions, which you’ve mentioned here.
I don’t want to go too heavily into any of this but basically creatine is produced by combining amino acids in the body. We get it from meat because the animals produce it themselves, and so do we. Some athletes choose to supplement it, but it isn’t necessary, we produce enough on our own without ever taking it in from any external source. There is a very rare mutation which doesn’t let you synthesise it on your own, but you’d know if you had it.
Similarly, carnosene is only found in meat, but both of the amino acids which, when combined, make carnosene, are found in plants. Once again, meat contains carnosene because animals synthesise it by combining aminos from plants, and humans do the exact same thing. So once again, we don’t need to take in dietary carnosene because we make it on our own.
This is all part of the “complete protein/ amino” myth which was thoroughly debunked about 20 years ago, and only really rears its head when it’s used against vegans. There is no vitamin, mineral, nutrient or protein which you can’t get as a vegan, and the millions of healthy vegans, many of whom have never eaten animal products, should be evidence enough of the truth of that fact.

Roasted Veggie Tacos with Citrus Salsa
Chickpea “tuna” makes an amazing spread/dip for veggies and crackers 🌿 To make chickpea tuna all you do is rinse a can of chickpeas and add that to a mixing bowl. Then add 3 tablespoons of vegan mayo, some finely chopped celery (1-2 stalks) and red onion (¼ cup) and chopped pickles (1-2) if you want. I also usually add 1 mini diced cucumber. Also add some garlic powder, dill, salt and black pepper. Then add lemon juice and/or 1 tablespoon of vinegar. Mix everything together and mash so that some of the chickpeas are crushed, and that’s it! I never measure anything and it turns out delicious every time. Please make it if you haven’t already 😊
