I need to remember this recipe I invented:
- 1 cup quinoa, rinsed
- 2 cups water
- Packet of taco seasoning
- 1 can black beans, rinsed and drained (or 1-3/4 cups, cooked)
- Taco shells and some kind of cheese (I just used a quarter of a slice of vegan cheese each), plus whatever other toppings you would like
Rinse quinoa and put in rice cooker with water, taco seasoning and black beans. Cook.
When "cook" popped up, it didn't seem quite done, so I stirred and left on "keep warm" about 20 minutes.
The cheese and/or toppings are not optional. It's kind of boring without it. But it's super easy and feeds me for a few days, so I'll be making it again. Might try with tortilla chips, too.
Tofu gnocchi (with mushrooms and spinach). Not very attractive, but tasted good. (No, it's not soup, I just like a lot of sauce π)
Yes, I ate two foods I shouldn't, but I haven't had any nightshades recently, and I'm tolerating tofu these days. I started with a small amount and worked my way up.
After wondering what "flapjacks" were on the Great British Baking Show, I looked up this recipe. No, it's nothing like American flapjacks which are pancakes. It's something like a soft oatmeal cookie bar.
I just made my 3rd batch. I use margarine (because that's what I have) add two tsp of cinnamon (because we like it) and added raisins to batch #2, and chocolate chips and 2 tsp vanilla to batch #3. All are good. They are devoured within a day. Might try an icing next to make it like an iced oatmeal cookie.
(The recipe does use weights in grams, so you need a scale, or to convert. The oven temp is about 355β° in Fahrenheit, and I don't know if my oven temp is inaccurate or what, but I bake for 25-29 minutes.)

Made Lentil and Mushroom Ground "Beef" to eat with pasta and sauce...not bad. I'm using the Banzi chickpea pasta, which isn't as good as regular, but does boost the protein. I used a lot of tomato sauce, so I'll have to be careful how much I eat in a day.

I did try this and it's pretty good. Not real sweet, not quite as good as rolled with a swirl, but easy enough that I remembered the entire recipe without looking this morning. Now I don't have to buy cinnamon raisin bagels.

Low effort Lentil Soup!
Ingredients
A half a tube of squeeze-in garlic paste (or garlic powder or fresh cloves)
Tumeric
Curry powder (which includes tumeric, but ya know)
Celery Salt
A bag of dry Lentils
Mushrooms
Too Much Dried Basilβ’
Spinach
A can of diced Tomatoes
Onion Soup Mix
Frozen Peas
Or a variation. The only Absolute Requirements for this recipe are
A bunch of spices, one of which being Too Much Dried Basilβ’
Soup Mix (preferably Onion)
Canned Tomatoes
The Lentils
2-4 veggies
Fill the pot up with the lentils, onion soup mix, spices, and water (water should more than cover the lentils). Bring the contents to a boil. Once boiling, lower heat to a simmer for 30 minutes. If needed, add more water along the rest of your ingredients. Keep on simmer for about ten more minutes, then grab a ladle and serve.
This soup is a lifesaver! The hardest part of this recipe is waiting while it cooks!! :)
This got me wondering if you could just throw some lentils in onion soup mix and water for soup? Onion soup is pretty flavorful...and appears to be vegan. I wonder if I could cook that in the rice cooker?
hi, this might be a good flavorful recipe even though it does take some spoons (but there's basically no way to mess up and it's not bland and vegan)
disclaimer, I'm not Korean and I'm giving you the most basic version but Korean vegetable pancakes (μΌμ±μ ya-chae-jeon) are incredible
Ingredients:
~1 cup of flour
~1 cup of water
whatever vegetables you like
large pinch of salt
vegetable oil
Optional ingredients:
gochujang/sriracha
soy sauce
rice vinegar
spring onion
sesame oil & sesame seeds
onion/mushrooms/sweet potato/zucchini/..
Basically what you do is cut all your vegetables into matchstick-shaped pieces (the longer they need to cook, the smaller you cut them). Put them in a large-ish bowl. Then plop in the flour, water, salt (+optionally some gochujang/sriracha) and mix mix mix. Your desired product should be vegetables covered in a layer of batter with a crepe-like consistency.
Then put a generous amount of oil into a hot frying pan and pour in the batter to your desired pancake size. Fry until golden brown. Repeat if you have batter left.
Optional stuff: I think onion, zucchini, sweet potato and mushrooms are particularly yummy. I like to make mine extra spicy via adding the mentioned chilli sauces. Plus I make a quick soy sauce + rice vinegar (5:1) dip which is the cherry on top. Also nice to pair with left-over rice.

amounts of everything are very subjective- make it as spicy or as peanut-y or filling as you want! this takes me about 6 minutes to make, involves heat and minimal stirring, and can be made with just a kettle or microwave. as its written here, itβs also gluten free and vegan you need: - one serving of noodles (rice noodles, ramen, etc) - some peanut butter, any type - hot water - soy sauce - powdered ginger - powdered something-spicy (anything from cayenne to black pepper, to taste) - honey, sugar, or similar optional but recommended: green onions, bean sprouts, any veg or protein steps: 1. cook noodles. set aside some (~1 tablespoon) of the hot water for later (or boil some more water in a kettle or pot). 2. rinse cooked noodles in cold water and set aside. 3. mix the hot water with a large spoonful (~2-3 tablespoons) of peanut butter, so that the peanut butter dissolves and becomes pour-able. 4. add powdered ginger, spice, honey, and soy sauce to the peanut butter, all to taste. i like mine very flavorful, so i use two shakes of cayenne, 3-4 shakes of ginger, 0.5 tsp honey, and approx. 0.5-1 teaspoon soy sauce (for a lighter version, begin with about half of all amounts and alter to taste) 5. chop your green onion and any veg or protein. for a single cake of ramen, a handful of toppings is enough. 6. mix your noodles, sauce, and toppings, and enjoy!

*I did dice and saute the onion, but then used powdered garlic and ginger, and just dumped everything in together. Also, I thought it was bland, until I added a lot more salt. Now I really like it. I'll probably start with 1.5 tsp next time, but suspect it will need 2.
Today's breakfast... zucchini latkes.
This recipe subs chickpea flour for the eggs and flour that I used to use. I was worried they might fall apart, but so long as I smooshed them together well and was careful, it worked fine. I used 1/8 teaspoon of pepper instead of the cumin. I love cumin, but not the flavor I'm used to, for these.
My stove has developed an issue where it doesn't want to turn off the burner to stay at a low temp. I have to keep turning it on, then off repeatedly to keep things from burning.
Google says I might need to lightly sand the infinity switch contacts, so I'll see if I can get to it later...or tomorrow... or never and I'll have to keep alternating off and on when I want any temp below Inferno.

That helped a lot. I think if I mix in some spinach, I could eat it plain. I'll probably still pick up some tortilla chips.
I just heated some for Youngest, with a sprinkle of cheese and a bowl of tortillas chips. He said it was good. Anytime someone in my house likes cheap, (mostly) healthy, vegetarian food, I'll call it a win.
It is really good with the chips. I can see this becoming a regular in my repertoire.
