Ingredients: 1/2 cup all-purpose flour. 2 large eggs. 1/2 cup milk. 2 tablespoons sugar. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 2 tablespoons unsalted butter. 1/2 cup fresh raspberries. Zest of 1 lemon. Powdered sugar for dusting. Fresh mint leaves for garnish.
Instructions: Preheat your oven to 425F 220C. In a blender, combine flour, eggs, milk, sugar, vanilla extract, and salt. Blend until smooth. Place the butter in a 10-inch ovenproof skillet and melt it in the preheated oven. Remove the skillet from the oven and pour the batter into the hot skillet. Sprinkle fresh raspberries and lemon zest evenly over the batter. Bake in the oven for about 15-20 minutes, or until the pancake puffs up and turns golden brown.
