This slow cooker Italian chicken orzo soup is hearty, flavorful, and perfect for a cozy night in. Packed with tender chicken, orzo pasta, carrots, and aromatic Italian herbs, it's a satisfying meal that's easy to prepare.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 cup uncooked orzo pasta. 4 carrots, peeled and sliced. 1 onion, diced. 3 cloves garlic, minced. 6 cups chicken broth. 1 can 14.5 oz diced tomatoes, undrained. 2 teaspoons Italian seasoning. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Sliced carrots, diced onion, minced garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper should all be put in a slow cooker. Make sure to stir everything together well. On low heat, cover and cook for 6 to 8 hours. On high heat, cook for 3 to 4 hours, or until chicken is done and vegetables are soft. Check the seasoning and make changes if needed. Serve hot with fresh parsley chopped on top.
