Ingredients: 1 cup gluten-free all-purpose flour. 1/4 cup almond flour. 1/4 teaspoon salt. 1/4 teaspoon baking powder. 1/4 cup unsalted butter, cold and diced. 1/4 cup cold water. 1/2 cup ricotta cheese. 6-8 fresh figs, thinly sliced. 2 tablespoons honey. Fresh rosemary sprigs for garnish. Olive oil for drizzling.
Instructions: Preheat your oven to 400F 200C. In a food processor, combine the gluten-free all-purpose flour, almond flour, salt, and baking powder. Pulse to mix. Add the cold diced butter to the processor and pulse until the mixture resembles coarse crumbs. While the food processor is running, slowly drizzle in the cold water until a dough forms. It should come together into a ball. Transfer the dough to a piece of parchment paper and use your hands to shape it into a flatbread shape, about 1/4-inch thick. Transfer the parchment paper with the dough onto a baking sheet. Spread the ricotta cheese evenly over the flatbread dough, leaving a small border around the edges. Arrange the thinly sliced figs on top of the ricotta cheese. Drizzle honey over the figs and ricotta. Bake in the preheated oven for 15-18 minutes, or until the edges of the flatbread are golden brown. Remove from the oven and garnish with fresh rosemary sprigs.
