Dinner date at Hola Arepa in Minneapolis. Chips and six salsas with a mocktail followed by arroz verde with black beans, guacamole, pickled cabbage, tomatoes, jalapeños and plantain.

Dinner at Suerte in Austin, TX. Refried lentils with house made tortilla chips to start followed by mushroom tlacoyo with jalapeño black garlic sauce 👌🏼👌🏼

First meal we had in Austin, TX: onigiri at Sugar Pine. I had the spicy tofu and avocado and they were 😋🍙

Brunch at Black Coffee and Waffle bar this morning with the fiancé. I got the ‘naughty waffle’ gluten friendly (the gluten friendly batter is the vegan batter), without whipped cream. It’s a waffle topped with almond butter, bananas, strawberries, blueberries and granola. 🍓

First time having this flavor of Halo Top and let me say it did not disappoint. 😇

Salad dates at Crisp and Green are the best. This time I got the chef curry with kale instead of rice (good choice if I do say so myself)

Coffee date with the bestie at Angry Catfish. An oat milk latte for me and a matcha latte for her. (Yes it’s a blue matcha latte)

Had my bridal shower yesterday. My aunt had @chipotle catered in and my cousin made me vegan gluten free chocolate cupcakes. It was such a lovely day with even better people. 💍

Dinner date with the fiancé at @holaarepa . We shared the chips and 6 salsas for the appetizer and for my entree I had the arroz verde with guacamole. Such a delicious dinner and the best date 😘

No trip is complete without coffee from a local coffee shop. I got a vanilla latte with macadamia nut milk. I have never tried this milk alternative, but I definitely would have it again. Perfect blend of nutty and sweet😋. Also picture ft. the fiancés sweaty back post hike on the Superior Hiking Trail. ☕️🥾
