It's been years since I last posted, though I've lurked from time to time. A lot has changed for me since then. I got a new knee back in 2023. The biggest change has also been related to my health. I was diagnosed with Chronic Heart Failure one year ago. I may tell those and the other stories at some point, but this is primarily a (re-)introduction to my life. One cool thing to come from that diagnosis is that I've begun cooking as a hobby. Within my overall hobby, I have a few side quests in working on. The quest I'm featuring today is what I'm calling my Minnesota Hotdish Journey. I found a really cool casserole dish in the shape of Minnesota that notes the names of many local hotdishes and casseroles. I decided it would be fun to find and cook recipes for all of them. I wasn't wrong...
Shipwreck Casserole is today's #MNHotdishJourney recipe. During my research, it seemed as though, traditionally, this casserole would have kidney beans. I also saw carrots included in many of them. The recipe I decided on (from simplyrecipes dot com) included neither, so it was an easy selection, and I'm happy I chose it.
The scents as I prepped and cooked it had my mouth watering well in advance of the ring of my timers, and once we started eating it, Millie remarked many times how good it was. Needless to say, it will show up again at some point.
The recipe called for the green onion garnish. Both Millie and I had the idea that sour cream would also add something interesting to it. It does taste similar to some other dishes. Oddly enough, its taste profile runs close to that of beef enchiladas, with shredded hash browns standing in for tortillas and rice. Either way, it was super tasty and I had to struggle to resist getting a third helping. I'm already looking forward to lunch tomorrow.
