Paleo Pepper Nachos are a great alternative to regular nachos for people on a ketogenic or paleo diet because they are low in carbs and don't have any grains. They make a tasty appetizer or meal because they are full of flavor and toppings.
Ingredients: 3 large bell peppers, sliced into rounds. 1 lb ground beef or turkey. 1 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp garlic powder. 1/2 tsp onion powder. Salt and pepper to taste. 1 cup shredded cheddar cheese or dairy-free alternative. 1/4 cup sliced black olives. 1/4 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup diced avocado. Fresh cilantro, for garnish.
Instructions: Warm the oven up to 190C 375F. Put olive oil in a pan and heat it over medium-low heat. Break up the ground meat with a spatula as it cooks until it turns brown. Add salt, pepper, garlic powder, onion powder, chili powder, and cumin. After another two to three minutes, take it off the heat. Place rounds of bell pepper in a single layer on a baking sheet. Put some of the cooked meat mixture on top of each pepper round. Add cheese shreds to the pepper rounds with meat on top. On top of the cheese, put black olive slices, tomato dice, red onion dice, and avocado dice. Put it in an oven that is already hot and bake for 10 to 12 minutes, or until the cheese melts and bubbles. Add fresh cilantro as a garnish before serving.
