Mixed seafood in a creamy sauce makes up this tasty fish pie. It's topped with buttery mashed potatoes and melted cheese. The crushed potatoes on top give each bite a great crunch, and the meal is comforting and filling for seafood lovers.
Ingredients: 500g mixed seafood such as salmon, haddock, and prawns. 500g potatoes, peeled and diced. 200ml double cream. 50g butter. 1 onion, finely chopped. 2 cloves garlic, minced. 2 tablespoons plain flour. 200ml fish stock. 100g grated cheddar cheese. 1 tablespoon chopped fresh parsley. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Ready the oven by heating it up to 200C 390F. To make the potatoes smooth, boil them in salted water until they are soft. Then, drain them and mix them with butter. Add pepper and salt to taste. Set the olive oil on medium heat in a large pan. Put in the garlic and onion, and cook until they get soft. Add the plain flour and stir. Cook for one to two minutes, until this is golden. Slowly add the fish stock while stirring all the time until the mixture is smooth and thick. Add the double cream and let it cook for a few minutes until it gets a little thicker. Mix the seafood and chopped parsley into the sauce, then stir everything together well. Add pepper and salt to taste. Put the seafood mixture in a dish that can go in the oven, and then spread the mashed potatoes on top to make it look rough. Add the grated cheddar cheese on top of the mashed potatoes. Put it in an oven that is already hot and bake for 25 to 30 minutes, or until the top is golden and crispy. Serve hot, and if you want, top with more parsley.
