JUICING MACHINES: CHOOSING A JUICER
There are a variety of different juicing machines on the market today. Prices range from one hundred dollars to more than eight thousand dollars, depending on the make and model, and whether it's for residential or commercial use. Most people are probably familiar with the many residential juicers on the market. All of these juicers use one of three basic methods of extraction: centrifugal, masticating, or triturating.
Centrifugal juicers essentially shred or cut the fruits and vegetables fed into them into tiny pieces with a sharp interior blade, then spin them in a basket filter at high speeds. The centrifugal force separates the juice from the pulp. This method of pulp extraction is handy for households and works great in commercial environments. A certain amount of heat and oxygen is introduced into the final product due to the way in which the centrifugal juicer extracts the juice. This process can often compromise the quality of the juice (nutritional value) to some extent, however high-speed modern centrifuge juicers efficiently cut fruits and separate them from the pulp before reaching high enough temperatures. Centrifugal juicers are typically faster, quicker to clean, require less food prep and are more cost effective.
Some of the latest commercial grade machines, such as the Zumex Multifruit juicer, use a modern centrifuge system with different speeds and a sharper, more robust grinder blade and filter tank which cuts the fruit and separates the pulp from the juice most efficiently. It also yields the most juice of any of its competition, and less pulp than its competitors as well; less waste, better yield, higher performance, and extremely quiet for a centrifuge juicer.
Masticating juicers grind vegetables and fruits into a pulp or paste, and then spin the pulp at mid to high speed, squeezing the juice through a screen at the bottom of the tank. The friction involved in this process generates heat, which may affect the nutrient content of the resulting juice. The latest models all focus on low-speed slow juicing to minimize the amount of heat caused during the squeezing process and attempt to maximize nutritional content of the extracted juice. These types of juicers are becoming popular on retail shelves on the market; they are typically quieter than centrifugal juicers and yield more juice from leafy greens, with less leftover pulp, but are more time consuming to clean and more expensive. In some cases we have found that several masticating juicers do not clearly yield more juice than centrifugal juicers, and have actually left behind more waste and more pulp. Masticating juicers are simply too slow to handle the moderate to high volume of commercial use. Don't be fooled into believing the hype about masticating machines being considered "cold-press" juicers. They are not the same. Masticating juicers still use friction heat during the extraction process - it is NOT cold pressed.
Triturating or hydraulic press juicers cut and grind vegetables and fruits, then extract the juice from the pulp by applying great pressure. This extraction method yields the most juice, and also provides juice with the highest nutritional value, because the least amount of oxygen is introduced during processing. There is usually no pulp in the finished product. The cutting and grinding does still generate some heat. Triturating juicers typically require more work during the juicing process as well as cleaning time, however in most cases the juice quality compensates for the efforts. These days, juice bars producing raw, cold-press juices, typically make use of the industrial/commercial grade hydraulic press juicers.
The latest commercial grade citrus juicing machines from popular brands Zummo and Zumex, both manufactured in Spain, each have their own unique juice extraction process, one which has an automated process of cutting citrus fruits in half, then squeezing both halves of the fruit to extract the juice without ever touching the peel, thus avoiding any acids, oils or bitterness from coming into contact with the juice.

Most low-priced juicers are not built for daily operation; the cutting blade and motor soon wear out. If you are planning to juice regularly, whether at home or for commercial use at your food-service business, look for a machine for which the power of the motor and durability are comparable to specifications for the more expensive juicers. Ensure you are getting a multiple-year warranty, and available parts and/or service if required, especially in the case of commercial use.
