The only possible explanation for her sudden change of heart is her mom scaring her into thinking she’ll die lonely, but it sort of feels like her admitting defeat in some way. Like, in the first season she rebelled against all the things that represent “traditional” society, but she sort of gives in to it. Her conversation with Director Ton at the end is especially indicative of that.

That’s not what Ton said. What he said was that Tadano was on another level than them, he didn’t need to convince himself that life is worth living. But for the common salary workers, life can be long and boring and sometimes you need an anchor to give yourself a reason to keep living. In Ton’s case, that anchor was his wife and family.
He was encouraging Retsuko to find her anchor. To not give up her dreams for the ideals of someone else.
Now, I don’t think Retsuko wanting to get married was out of nowhere. In the first season she realized it’s something she wanted, first to be able to quit her job, but when she met Resasuke it turned into a proper wish. She just wanted to be with him.
Her rejection to her mom’s attempt to engage her with someone was because she didn’t want to be paired up; she wanted to meet someone on her own and fall in love in love first. She wanted it to be her choice.
