**Chef Larry Edwards is the author of two new cookbooks being released in 2017: Style & Spice (Southwest cuisine) and The American Table (classic dishes from America's past). He is also the author of the international bestselling cookbook Edwardian Cooking: 80 Dishes Inspired by Downton Abbey's Elegant Meals** There is an adage which goes "bread is the staff of life." There may be a lot of truth in this as through the history of mankind, bread has played an important part in keeping many civilizations alive. When it comes to breads, we all have our favorites. It might be the bland and boring white bread. It might be the enticing varieties of Italian breads. It might be the quaintness of French Breads. When it comes to breads, however, the master of the domain is the long and lean Baguette! What separates the Baguette from other types of French Bread is really quite simple. It is the shape. Whereas a typical French bread is formed into a rather large loaf, the Baguette is long and narrow (and if over baked can be used as a weapon). The dough to make either French bread or a Baguette is essentially the same. The secret to a perfect taste and texture for a Baguette is in the rising periods (as well as the shape). To make Baguettes in the old world artisan way, does take some time -- most of this time for the various rising periods. The actual putting together of the Baguette is quite simple and only takes a few simple ingredients. If you happen to be a party person, it is a must to learn how to make a Baguette. Why? Because the best bruschetta's (small open-faced Italian appetizers) are made with a Baguette. If you happen to have a Baguette or two which have gone stale, they make the best breadcrumbs. If you fancy enjoying a nice little get together featuring wine and cheese, it is the Baguette you will always to have on the table. All it takes is five ingredients and a little time and you will begin enjoying the regality of the famed Baguette! BAGUETTES (make 2 or 3 long thin baguettes) Ingredients needed to make Baguettes: 1 1/2 tsp. yeast 3/4 cup warm water 1 Tbs. sugar 2 cups all-purpose flour 1 tsp. salt Steps: 1) In a large bowl, stir the yeast, warm water, sugar and 1 cup of flour. 2) Cover the bowl and let rise 1 hour. 3) Into the bowl, stir the remaining flour and salt to form a dough. 4) Place the dough onto a floured surface and knead 10 minutes. 5) Place the dough back into the bowl, cover and let rise 2 hours. 6) Place the dough onto a floured surface and divide into 2 or 3 portions (depending on how thin you want your Baguette). DO NOT knead the dough again. 7) Using your hands, form the dough into an 10x4 rectangle. 8) Using your hands, roll the dough into a long log (loaf) and pinch the ends. 9) Line a baking sheet with parchment paper. Place the Baguettes onto the prepared baking sheet and let rise 1 hour. 10) Pre-heat your oven to 450 degrees. 11) With a sharp knife (or bakers razor) make a shallow slash or two atop the Baguettes and dust with a little flour. 12) Place into the oven and bake 20-25 minutes (depending on the size of your Baguette) 13) Remove from the oven and cool the Baguettes on a wire rack.
Baking and a Big Worry
This morning my husband slept late (late for him, he woke up around 8, usually is up by 5:30) and spent much of the morning lying on the sofa watching old movies. I was really frightened by this, because he’s not only an early bird, but a somebody who has to be busy every minute (and then complains how much he has to do.) However, he did clean the cat litter, wash a load of clothes, take them out of the dryer, eat a normal lunch and clean up afterward, and he denies feeling bad, so I hope he’s okay.
Meanwhile, I was busily making fruit filled Kolache. The only thing you can buy called Kolaches around here are breakfast sausages rolled up in yeast donut dough and baked. I’ve been meaning to try to bake them for, well, actually decades. The dough is finished its first and second risings, has been shaped into biscuit like shapes and they are rising. I made apricot filling for half of them and will make cheese filling for the other half (two dozen altogether. Jesus give me freezer space).
I’m using two baking sheets that I bought about 18 months ago and forgot I had. I bought them, tore my rotator cuff, and spent weeks vegetating on my sofa instead of making whatever it was I intended to make. About 6 or 8 months ago, someone liked an old post of mine on Tumbler, and when I clicked on it to find out what post it was, I saw a few other recommended posts, one of which was about buying the baking sheets. I did what? I looked in the cabinet that hold such things and sure enough, two new baking sheets from Party City, one with the sticker still on it. If it hadn’t been for someone liking my post, they probably would have been buried in there forgotten to this day.

SAF Red Instant Yeast
SAF instant is the yeast used most often in the King Arthur test kitchens. Neujahrsbrezel bread is a German, pretzel-shaped sweet bread typically made at the start of a new year. It's August and I'm not German, but a friend of mine has been bugging me every couple of weeks for several years to make it, and yesterday was the day. This entire, gorgeous, sweet pretzel was made for him. It was rich and tender, and the sugar sprinkled over the top made it sparkle.
I love making labor-intensive, beautiful yeast breads. It feels like play to braid, fold, twist and fill bread dough. On this site, you can find:
Cajun cheddar swirl bread
Bagels
Chocolate swirl buns
Cinnamon pull apart bread
Dutch crunch bread
Stromboli
Pita bread
Estonian Kringel
Yesterday I looked at several recipes for this bread and what I found were all pretty similar. If you make this, don’t be alarmed that the dough doesn’t rise as much as you would hope the first time around. I’ve made this twice, and each time I expect that the dough will rise high enough to fill my big glass bowl, but it doesn’t. Be patient and let it rise in a good, draft-free place for as long as 1-1/2 hours. After you punch it down and shape it, let it rise again for another 30 minutes or so. After the bread is baked, it is sweet and tender, and is lighter than you would expect.
I slightly modified the recipe I found on Butterbrot. My changes were to the overall shape (do a google image search and find a look you like) and I sprinkled sugar over the bread before it went in the oven.
