Will Graham is a Wind-Runner, specifically a Flidaisin (werestag). [yeah shut up. i was gonna make him a mage but he didn't want to be a mage he wanted to be a stag so here we are].

Season 1 Will leaned toward the Wind-Chaser accord, skirting outside both of his societies and preferring solitude to mull over dreams and nightmares. Season 2 Will embraces the Heart-Ripper accord. He wants to lure Hannibal in with impeccable social skills and then ram his antlers through the goddamn wolf (the ramming is more metaphorical, but if it comes down to it....)   Down at his core he's likely more of a Den-Warder. He has a strong sense of family (though it is an odd family) and would protect it ferociously.

S1 Will was way out of harmony with his Beast. He rarely shifted and the encephalitis didn't exactly help the Harmony either. S2 Will is in tune with his Beast, though not nearly as much as Freddie. She accepts that the fox is as a part of her as her arm; Will views the stag as a tool. He changes into his feral form to run with his dogs and to keep this harmony.

The stag in his visions represents his beast as much as anything else. Hence the fact initially it was a horrific nuisance, but now he uses it to fantasy murder Hannibal.
