Kielbasa, Fingerling Potato and Brussels Sprouts Skillet

1 lb fingerling potatoes, chopped in half
1 lb Brussels sprouts, chopped in half
1/2 c. red onion, finely chopped
3 tbsp olive oil, separated
Preheat oven to 425 degrees. In a mixing bowl add potatoes and 2 tbsp olive oil, stir to coat, season with salt and pepper. Lay evenly on a baking sheet lined with parchment. Roast in the oven for 15-18 minutes, until tender. Be sure to flip about halfway through cooking time.Β
Meanwhile, heat your skillet on medium high heat. Sear each side of the kielbasa. Youβre really looking to add color here, it doesnβt need to be warmed the whole way through. Set aside. Add remaining olive oil, sautee onions for about 3-5 minutes. Add garlic and sautee for an additional 2 minutes. Add brussels spouts and vegetable broth and simmer until broth as evaporated, about 10 minutes. Add sliced kielbasa and roasted potatoes. Stir to combine, season with salt and pepper. Serve and enjoy. Β Β
