Toast: Slice sweet potato into ~1/4 inch "toasts". Bake at 400 degrees for 30 minutes (flipping halfway through). Top with banana/peanut butter/cacao nibs and yogurt/raspberries/honey 2. Chips: Slice sweet potato as thin as you can, toss in avocado oil, sprinkle with salt & bake at 300 degrees for 50 minutes to 1 hour (watch towards the end and remove any smaller chips before they burn). Serve with guacamole or avocado mash 3. Fries: Cut large sweet potato into fries, toss in avocado oil, bake at 425 degrees for 30-35 minutes. Top with black beans, cheddar cheese, green onions, greek yogurt and avocado. 4. Noodles: Spiralize a large sweet potato, cook covered for ~5 minutes in large frying pan with steamed broccoli, diced red pepper, sliced red cabbage, cooked chicken (or tofu), sesame oil, coconut aminos, and garlic.
