Ingredients: 2 cups shelled edamame cooked. 2 tablespoons white miso paste. 2 tablespoons tahini. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1 teaspoon matcha powder. 1 teaspoon wasabi paste. 2 tablespoons olive oil. Salt and pepper to taste. Water as needed.
Instructions: In a food processor, combine edamame, miso paste, tahini, garlic, lemon juice, matcha powder, wasabi paste, olive oil, salt, and pepper. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add water, 1 tablespoon at a time, until desired consistency is reached. Taste and adjust seasoning if needed. Transfer the hummus to a serving bowl. Garnish with a drizzle of olive oil, a sprinkle of matcha powder, and a pinch of sesame seeds, if desired. Serve with your favorite dippers.
