Ingredients: 4 cups potatoes, peeled and diced. 1 cup onion, finely chopped. 1 cup celery, diced. 1 cup carrots, sliced. 4 cups chicken broth. 1/2 cup butter. 1/2 cup all-purpose flour. 2 cups sharp cheddar cheese, shredded. 2 cups milk. 1/2 cup heavy cream. Salt and pepper to taste. Chives for garnish.

Instructions: Put the potatoes, onion, celery, carrots, and chicken broth in a large pot. Bring to a boil, then lower the heat and let it cook slowly until the vegetables are soft. Melt the butter over medium heat in a different saucepan. Add the flour and stir to make a roux. Cook for one to two minutes, until the roux is lightly browned. Slowly whisk in the heavy cream and milk until the mixture is smooth and thick. Mix in the cheese until it melts. Add the cheese mixture to the pot with the vegetables and stir it around well. Add pepper and salt to taste. Let the flavors blend for another 10 to 15 minutes by simmering. Serve hot with chives on top. The creamy and cheesy goodness of this potato soup is great!
