Ingredients: 1 1/4 cups gluten-free all-purpose flour. 1/4 cup finely ground walnuts. 1/2 teaspoon salt. 1/2 cup unsalted butter, chilled and cubed. 3-4 tablespoons ice water. 1/2 cup packed dark brown sugar. 1/2 cup maple syrup. 3 large eggs. 1/4 cup Nocino walnut liqueur. 1 teaspoon vanilla extract. 1/2 teaspoon sea salt flakes. 1 1/2 cups coarsely chopped walnuts. 2 tablespoons unsalted butter, melted.
Instructions: Pulse the gluten-free flour, ground walnuts, and salt together in a food processor until everything is well mixed. Pulse the mixture until it looks like coarse crumbs after adding the chilled butter cubes. Add the ice water a tablespoon at a time and pulse the food processor until the dough just starts to stick together. Spread the dough out on a clean surface and make a disk shape with it. Set it aside for at least 30 minutes while you wrap it in plastic wrap. Before you start cooking, heat the oven to 375F 190C. Put some flour on a surface and roll out the chilled dough. Then, put it in a 9-inch pie dish. As you like, trim the edges and crimp them. Put the eggs, brown sugar, maple syrup, Nocino liqueur, vanilla extract, and sea salt in a large bowl and mix them fully with a whisk. Add the chopped walnuts and melted butter and mix them in. Put the filling into the pie crust that has been cut out. It should be baked for 40 to 45 minutes, or until the crust is golden brown and the filling is set. Take it out of the oven and let it cool down completely before cutting it up and serving.
