I'm not sure if it would be a good idea or a bad idea, but it would be extremely funny if the writers brought back Penny again. Things just go on with the plot and then Penny showed back up in Volume 12 in much the same fashion as she did in Volume 7. Penny becomes the 'Kenny' of RWBY. It would be even funnier if they proceeded to kill her off again after that.
It would be much like the post I read by another blogger here about Penny and Ruby being thematic parallels to Ozpin and Salem. If they parallel on another, then Penny going through a constant death and resurrection cycle would be entirely within bounds of the story of the show.
So not only would it be funny, it would be interesting storytelling.
Heck, maybe by Penny's second or third resurrection, Ruby could actually tell Penny that she has feelings for her.
