I wanted a dip that wasn't just extra calories or store bought junk. With the ingredients I already had, this Universal Dip was born, Why call it universal? Because it tastes great as a dip with veggies or crackers, as a sauce for meatballs, as a stuffing for chicken, as a side for fish, as a topping for eggs and I am sure you can get creative too. I've eaten it 4 different ways in 2 days.
Thrival Universal Dip:
1 cup organic cottage cheese (2%fat)
1/2 cup oven toasted pecans (walnuts and pine nuts work great too!)
1 small bag frozen spinach
Optional additions: Black pepper , Sea salt (optional if your cottage cheese is already salty), Garlic powder, red pepper flakes or cayenne powder.
Heat frozen spinach until melted and hot. While that is heating, spread crushed pecans out on a sprayed pan. Place under broiler for VERY short time until they begin to darken- watch these closely! Remove spinach from heat and place in a blender with the cottage cheese. Blend until smooth. Add toasted pecans and blend again until smooth. Season if you like… But will have a lot of flavor already. Serve warm. Over chicken, dip veggies, over my lemon feta turkey meatballs, as a smear for an egg sammy, the list goes on!
