Yaka Mein

Yaka Mein is a traditional New Orleans comfort food, alleged to be a cure for a hangover. Either way, it’s easy and tasty!

Note: I don’t actually cook with precise measurements, I go by eye and taste things every so often, adjusting as need be.

Ingredients

Beef (If Vegetarian, replace with Beef-flavored Seitan)

Eggs

Spaghetti (or similar pasta like spaghettini or angel hair) 

Scallions

Beef stock (If vegetarian replace with vegetable broth)

Soy Sauce

Garlic

Cajun Spice

Mise en Place

Slice the beef extremely thinly

Cut scallions on a bias

Hard boil one egg per person

Cooking

Cook the spaghetti according to instruction

If your beef is not cooked, quickly pan fry it.

In one pot combine stock, soy sauce, cajun seasoning, and garlic. Bring it to a simmer.

Assemble everything big bowl add spaghetti first, hard-boiled egg sliced in half, beef slices and garnish with scallions, then cover with broth.

BM Leather by Mi Zhou for Stella McCartney

For every tonne of beer brewed, you’ve got a quarter of a tonne of beer mash, the residual grain/pulp, left behind from the brewing process. Converting this into a fabric, BM Leather uses a by-product in a way that upscales it into a fashion product. 

Produced in cooperation with Beavertown Brewery, Mi Zhou developed a leather-esque fabric out of the residual wet mash, which comprises mainly mashed grain, husk, sugars, and water. 

Hat pins or brooch - all made of the fabulous rayon chirimen fabric. Rayon chirimen is a Japanese type of fabric produced from cellulose. Although it is no different to the touch than silk, it can be worn by vegans. Why specifically vegans? Many vegans, apart from not eating meat or animal products in general, like butter or honey, don't use such products in everyday life. Leather, wool or silk are also included in this category. For each of you to enjoy the beauty of the tsumami zaiku, I would like to introduce rayon chirimen. The number of designs is limited at the moment because it is more difficult to acquire than silk. I plan to supply this fabric - I invite you to contact me if you fell in love with a silk item, but prefer a version made of rayon chirimen. It will help me make the right choice of colors :)
