These mini vanilla loaf cake cookies combine the flavors of a classic vanilla cake with the convenience of cookies for a delectable treat. It's ideal for snacking or sharing!
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, softened. 1 large egg. 1/4 cup milk. 1 teaspoon vanilla extract.
Instructions: Set the oven to 350F 175C and heat it up. Butter and flour mini loaf cake pans. Mix the flour, baking powder, and salt together in a bowl with a whisk. Mix the butter and sugar in a different bowl until they are light and fluffy. The egg and vanilla extract should then be added and mixed in. Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often. Don't mix any further than that. Spread the batter out evenly in the mini loaf cake pans that have been prepared. After the oven is hot, bake it for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean. These little vanilla loaves should be taken out of the oven and left to cool in their pans for a few minutes. With care, take the cakes out of the pans and place them on a wire rack to cool completely. Once it's cool, you can drizzle it with a simple glaze or sprinkle powdered sugar on top if you want to.
