@gradientdescent-does-it-all inspired by our conversation about whether uj cake would make decent hiking food, yesterday I dusted a slice in potato starch, wrapped it in parchment paper, left it overnight, and then threw it in my purse today while running errands. Worked great! I really don’t think it even needed the potato starch, but it would probably help if a batch came out sticky.
Behold, the starched uj cake after being in my purse for about eight hours. It’s essentially unchanged.
If I were feeling a little more motivated I’d plug the ingredients into one of those online calorie calculators and see if I could get a rough estimate of calories per slice, but I’m lazy. I would guess it’s similar to a Kind bar.

so for context this is the galaxy's edge uj cake recipe
firstly those pieces in the picture are way too big. holy shit that is a brick. this is not a nice light fluffy cake as most people would think of a cake, what 'uj cake' actually is is a BLOCK of dried fruit, nuts, seeds, etc, bound together by essentially caramel. you DO NOT WANT to eat a FIST SIZED PIECE of that
but with the actual recipe, my problem is this: simply not flexible enough. too specific of ingredients. uj cake must have some combination of nuts and dried fruit, possibly other stuff, and it must be somewhat sticky, and it must be shelf stable. if you have met all of those requirements, you have made uj cake
'slivered almonds' my ass, you chuck whatever you have available in a bowl. these aren't cheap ingredients, if you've got half a bag of dried mango or a bunch of snack packs of raisins, toss that in there
i do appreciate the spice recommendation, but again, just kinda do whatever you want. i generally include pepper, ginger, and cinnamon, but its up to you!!
overall it's really not a bad recipe. it's canon accurate, it'll get you an uj cake, there's nothing wrong with it. i just have a firmly held belief that mandalorian 'recipes' are really more of a flexible set of guidelines

Hello!! I loved your Uj cake recipe ( looks better than the one on the book for me), I want to try it but idk how to approach it because I'm mild allergic to nuts and hazelnut and well... Idk what could I use as a "good" substitute. Thanks in advance if you have a idea ❤️
Hello! So, the hazelnut part is easy, just substitute another 1/4 cup of something you can eat for them. Same goes for the almonds.
It’s hard to say what to substitute for the pecans (walnuts in the original recipe) without knowing more about what exactly you’re allergic to. If you can eat cashews that would be a good substitute! If you can’t eat cashews then look for something that’s harder than dried fruit but not crunchy. Raw pepitas or sunflower seeds might work, but they would significantly change the flavor. It also might work to use something like roasted chestnuts (I have no idea how chestnuts interact with but allergies, since they’re very different from your usual tree nut) which you can find at Korean supermarkets.
