Once you go Basque, you can’t go back! I do love my Basque wines. This one’s an organic one, fermented in the family’s GARAGE with wild yeast, then spending a year on lees. This particular Txakolina is much lower in fizz than others from the region because no extra CO2 has been added. Still awesome though! Lemons, white flowers, chamomile, maybe even a hint of petrol, and a whiff of parmesan on the nose. Similar on the palate with some added stone fruit and even a wheat note.

First day of November in NYC and it’s 70 degrees...time to break out the Rosé! • • This is the Ameztoi Rubentis Txakoli Rosado from Getaria, Spain. It’s a blend of 50/50 Hondarribi Beltza and Hondarribi Zuri from 10-100 yr old vineyards planted in limestone soils and farmed in an ecological way. • • The grapes are hand harvested, de-stemmed, co-fermented in stainless steel with indigenous yeast and bottled with residual carbonation. • • Too say this wine is fresh and lively is an understatement! It’s full of rose petals, wild strawberry, raspberry, white pepper and sea salt.
