Leftover stuffing balls
Depression Era (or older!) stuffing recipe
My maternal grandmother's family recipe for turkey stuffing, taken from a letter she sent my mother a couple of years after Mom and Dad got married.
I use either toasted bread which I break up or I use unseasoned bread cubes. Our family is large and loves dressing, so I make it in my big roasting pan. I make lots of it. I use about three bags of the bread cubes or 2 or more loaves of bread. I add a well-beaten egg, two large tablespoons of poultry seasoning, half a bag of frozen diced onions or three large onions ground up, about a bunch of celery ground up, a good glob of bacon drippings (melted), enough warm water or whole milk (or half-water and half-milk) to moisten the whole thing, and salt (about a tablespoon if you want it salty). Stir all well. Then I usually add another dash of poultry seasoning and some parsley flakes.
If I don’t have bacon drippings, I use melted margarine or butter – about ¼ pound for a large amount of dressing, and I add about ¼ pound sautéed sausage meat. It’s hard to give exact amounts because I just throw it all together – as I watched my mom and aunt do for years. Salt amounts will vary according to taste. Mom used to rub salt inside the turkey. My aunt used to put bacon grease on the inside of the turkey. Everyone has her own trick, I guess. Cook your turkey slowly, keeping your oven heat about 300 or so. Don’t cremate the bird!

I’m writing a drabble and I need some turkey stuffing combinations because I don’t eat turkey nor do I observe Thanksgiving. Like apple and something. Chestnuts and something etc. Give me your best suggestions if you've got them : ) Thanking you in advance because I have no idea lol.
