This Grilled Tofu Miso Noodle Soup is a healthy and comforting dinner that's great for a weeknight. Adding savory miso broth to grilled tofu and rice noodles makes a dish that tastes great and fills you up.
Ingredients: 200g firm tofu, pressed and sliced. 150g rice noodles. 4 cups vegetable broth. 3 tbsp miso paste. 2 tbsp soy sauce. 2 cloves garlic, minced. 1 tbsp ginger, minced. 2 green onions, sliced. 1 cup sliced mushrooms. 1 cup spinach leaves. 1 tbsp sesame oil. 1 tbsp sesame seeds. 1 tbsp chopped cilantro optional.
Instructions: Preheat grill to medium-high heat. Grill tofu slices for 3-4 minutes on each side until grill marks appear. In a large pot, bring vegetable broth to a boil. Add rice noodles, garlic, ginger, soy sauce, and mushrooms to the pot. Reduce heat and let simmer for 5-7 minutes until noodles are cooked. Stir in miso paste until dissolved. Add spinach leaves and green onions, cook for an additional 2 minutes until spinach wilts. Divide the soup into bowls. Top each bowl with grilled tofu slices. Drizzle with sesame oil and sprinkle with sesame seeds and cilantro, if desired. Serve hot and enjoy!
